Ok for those living in more northern climates I know you’re probably laughing hysterically at me right now for thinking this is cold. It was a cool 57 degrees when I woke up this morning… Brrr! The chicken is so tender, juicy, and full of flavor! Paired with Acorn Squash, all roasted in the same pan = Perfection!įall is in full swing here in Southwest Florida. Use a flat spatula to lift each piece off of the baking dish and onto a serving tray or dinner plates.This Lemon-Herb Roasted Chicken with Acorn Squash is such an easy recipe. If desired, garnish with additional Parmesan cheese and herbs. Bake until the acorn squash pieces are tender and the Parmesan topping is crispy and slightly browned, about 25 minutes.Using your hands, gently press the Parmesan mixture onto one side of each squash piece for maximum coverage (it’s OK if a little falls off). Spread the acorn squash pieces out onto the prepared baking sheet(s).In a bowl, combine the Parmesan, herbs, melted butter, garlic powder, salt, and black pepper toss until well mixed.Then, cut each squash half into ½-inch thick moon-shape slices.
